This is a very ancient and somewhat rare chilli that is the cornerstone of authentic Mexican Mole. Just over Cayenne heat level the Chilhuacle Negro has strong flavor notes of cocoa, tobacco and dry fruit. Chilhuacle means ‘ancient chile’ in Nahualt, the language of the Aztec peoples. Fruit are small to medium sized with a bell shape and are a dark chocolate colour when ripe. Being very thin walled they are easy to dry for powder but they are especially good roasted before adding to salsa or mole. A must have chocolate variety that is quite versatile in the kitchen.
