Pasilla Bajio is very Mexican! That’s why it is perfect in your enchilada and salsa. The name means ‘little rasin’ apparently because of the dark brown colour when they ripen. Its mild, rich and smokey and very good when dried or powdered. It’s enthusiastically used in most mole sauces. It’s also very productive! Do yourself a favour and give it a go. Adios amigos!
